Granola
My grandmother has a dear friend that has had the annual tradition for many years of giving homemade granola as a Christmas gift. This recipe is easy to adapt so you can make your own unique flavor by changing the variety of nuts or dried fruit. This is excellent by the handful, with milk as cereal, or you can layer with yogurt to make parfaits.
Ingredients:
- Non-stick baking spray (I prefer coconut oil)
- 8 cups old-fashioned rolled oats
- 2 cups chopped walnuts
- 1 tsp salt
- 2 tsp ground cinnamon
- 1 cup local honey
- ½ cup maple syrup
- 4 tsp vanilla
- 2 cups dried cranberries (optional)
Instructions:
- Preheat the oven to 275°F. Spray two large cookie sheets with non-stick baking spray.
- In a large bowl, combine oats, walnuts, cinnamon, and salt. Stir until evenly mixed.
- Heat the honey in a liquid measuring cup for about 30 seconds to make it easier to pour. Add the maple syrup and vanilla, and stir well.
- Drizzle the honey mixture over the oat mixture, stirring until everything is evenly coated.
- Spread the granola mixture evenly across the prepared cookie sheets. Bake for 45-60 minutes, stirring occasionally, until golden brown.
- Remove from the oven and stir in dried cranberries while the granola is still warm, if desired.
- Let the granola cool completely; it will become crunchier as it cools.
