Crème Brûlée

Ingredients:

  • 6 egg yolks
  • Pinch of salt
  • ½ cup sugar
  • 1 tsp vanilla paste
  • 4 cups heavy cream
  • 1/2 cup brown sugar

Instructions:

  1. Preheat oven to 300°F. Bring a kettle full of water to a boil.
  2. Place 6 ramekins on a sheet pan.
  3. In a medium bowl, whisk together egg yolks, salt, vanilla paste, and sugar until smooth.
  4. Gradually pour in the heavy cream, whisking until fully combined.
  5. Divide the mixture evenly between the ramekins.
  6. Carefully pour the boiling water into the sheet pan until it reaches halfway up the sides of the ramekins.
  7. Cover the pan with foil and bake for 30 minutes.
  8. Check if the custards are set; if not, keep covered and continue baking until firm.
  9. Remove ramekins from the water bath and let them cool, then refrigerate for at least an hour.
  10. Preheat the oven’s upper broiler.
  11. Place ramekins on a dry pan and evenly divide the brown sugar on top.
  12. Broil until the sugar melts and caramelizes (watch carefully to prevent burning).
  13. Remove from oven, let cool, chill again, then serve.
