Crème Brûlée
Ingredients:
- 6 egg yolks
- Pinch of salt
- ½ cup sugar
- 1 tsp vanilla paste
- 4 cups heavy cream
- 1/2 cup brown sugar
Instructions:
- Preheat oven to 300°F. Bring a kettle full of water to a boil.
- Place 6 ramekins on a sheet pan.
- In a medium bowl, whisk together egg yolks, salt, vanilla paste, and sugar until smooth.
- Gradually pour in the heavy cream, whisking until fully combined.
- Divide the mixture evenly between the ramekins.
- Carefully pour the boiling water into the sheet pan until it reaches halfway up the sides of the ramekins.
- Cover the pan with foil and bake for 30 minutes.
- Check if the custards are set; if not, keep covered and continue baking until firm.
- Remove ramekins from the water bath and let them cool, then refrigerate for at least an hour.
- Preheat the oven’s upper broiler.
- Place ramekins on a dry pan and evenly divide the brown sugar on top.
- Broil until the sugar melts and caramelizes (watch carefully to prevent burning).
- Remove from oven, let cool, chill again, then serve.
