Cranberry Apple Pie

This is a delicious twist on traditional apple pie that bursts with fresh tart flavor from the citrus and the cranberries.

Ingredients:

  • 4 cups peeled, sliced apples
  • 2 cups fresh cranberries
  • ¼ cup tapioca flour
  • 2 cups sugar
  • ¼ cup fresh-squeezed orange juice
  • 1 tbsp fresh zest from the juiced oranges
  • 1 tsp fresh lemon juice
  • 1 tsp fresh lemon zest
  • 1 tsp cinnamon
  • ½ tsp salt
  • ¼ tsp freshly ground nutmeg
  • 2 tbsp butter
  • Pie pastry for a double crust (9” pie)

Instructions:

  1. In a large bowl, mix the apples, cranberries, tapioca flour, sugar, orange juice, orange zest, lemon juice, lemon zest, cinnamon, salt, and nutmeg. Let the mixture stand for 20 minutes.
  2. Preheat the oven to 425°F.
  3. Place one pie crust in the bottom of a pie pan (Click here for our All-Butter Pie Crust Recipe!) Add the fruit mixture to the crust and dot the filling with the butter.
  4. Roll out the remaining dough and place it on top of the filling. Seal and crimp the edges as desired.
  5. Bake the pie at 425°F for 10 minutes. Reduce the oven temperature to 350°F and bake for an additional 50 minutes, or until the crust is golden and the filling is bubbling.
