Cranberry Apple Pie
This is a delicious twist on traditional apple pie that bursts with fresh tart flavor from the citrus and the cranberries.
Ingredients:
- 4 cups peeled, sliced apples
- 2 cups fresh cranberries
- ¼ cup tapioca flour
- 2 cups sugar
- ¼ cup fresh-squeezed orange juice
- 1 tbsp fresh zest from the juiced oranges
- 1 tsp fresh lemon juice
- 1 tsp fresh lemon zest
- 1 tsp cinnamon
- ½ tsp salt
- ¼ tsp freshly ground nutmeg
- 2 tbsp butter
- Pie pastry for a double crust (9” pie)
Instructions:
- In a large bowl, mix the apples, cranberries, tapioca flour, sugar, orange juice, orange zest, lemon juice, lemon zest, cinnamon, salt, and nutmeg. Let the mixture stand for 20 minutes.
- Preheat the oven to 425°F.
- Place one pie crust in the bottom of a pie pan (Click here for our All-Butter Pie Crust Recipe!) Add the fruit mixture to the crust and dot the filling with the butter.
- Roll out the remaining dough and place it on top of the filling. Seal and crimp the edges as desired.
- Bake the pie at 425°F for 10 minutes. Reduce the oven temperature to 350°F and bake for an additional 50 minutes, or until the crust is golden and the filling is bubbling.
