Bacon-Wrapped Turkey Breasts
Ingredients:
- 1 (approximately 1.75 lbs) boneless, skinless turkey breast
- 2 tablespoons extra virgin olive oil
- 1 tablespoon KitchenAble Seasoning (or salt and pepper, as desired)
- 4 sprigs of fresh thyme
- 4 sprigs of fresh rosemary
Instructions:
- Preheat the oven to 350°F. Remove the turkey breast from its packaging, butterfly it, and cut it into 4 equal pieces.
- Pour the olive oil into a baking dish. Add the turkey pieces and roll them to coat with the olive oil.
- Sprinkle the seasoning evenly on both sides of each piece of turkey. Top each portion with one sprig of thyme and one sprig of rosemary.
- Wrap a strip of bacon around each of the four portions, tucking the ends of the bacon underneath.
- Place the baking dish in the oven and bake at 350°F for about 20 minutes, or until the turkey registers 165°F at the thickest point of each piece.
- Remove from the oven. If desired, turn the oven up to broil and return the turkey to the oven until the bacon is crisp.
