Ingredients:
- 12 silicone baking cups
- 2 rimmed baking pans (of the same size)
- 1 tbsp olive oil
- 9 large eggs
- ½ tsp KitchenAble Seasoning
- 2 tbsp whole milk
- ½ tsp Sambal Olek (or another hot sauce)
- ½ cup cheese of choice, cut into ¼” cubes
- 4 slices of bacon, cooked and crumbled
- 1 tbsp fresh chives or scallions, minced
- A kettle of boiling water
Instructions:
- Preheat the oven to 350°F.
- Generously brush the silicone baking cups with olive oil and place them on one of the rimmed baking pans.
- Divide the cheese, bacon, and minced herbs evenly among the prepared silicone cups.
- In a mixing bowl, whisk together eggs, KitchenAble Seasoning, hot sauce, and milk. Pour the egg mixture into the cups, covering the cheese and bacon.
- Place the pan on the middle oven rack. Carefully pour boiling water into the pan around the cups, creating a bain-marie.
- Cover with the second rimmed baking pan, placed upside down to form a lid.
- Bake for 15 minutes or until the eggs are set.
- Remove the pan lid and carefully take the baking pan out of the oven. Drain the water and release the eggs from the silicone cups.
- Serve immediately or freeze for later use.
