Bacon & Cheddar Sous Vide Egg Bites

Ingredients:

  • 12 silicone baking cups
  • 2 rimmed baking pans (of the same size)
  • 1 tbsp olive oil
  • 9 large eggs
  • ½ tsp KitchenAble Seasoning
  • 2 tbsp whole milk
  • ½ tsp Sambal Olek (or another hot sauce)
  • ½ cup cheese of choice, cut into ¼” cubes
  • 4 slices of bacon, cooked and crumbled
  • 1 tbsp fresh chives or scallions, minced
  • A kettle of boiling water

Instructions:

  1. Preheat the oven to 350°F.
  2. Generously brush the silicone baking cups with olive oil and place them on one of the rimmed baking pans.
  3. Divide the cheese, bacon, and minced herbs evenly among the prepared silicone cups.
  4. In a mixing bowl, whisk together eggs, KitchenAble Seasoning, hot sauce, and milk. Pour the egg mixture into the cups, covering the cheese and bacon.
  5. Place the pan on the middle oven rack. Carefully pour boiling water into the pan around the cups, creating a bain-marie.
  6. Cover with the second rimmed baking pan, placed upside down to form a lid.
  7. Bake for 15 minutes or until the eggs are set.
  8. Remove the pan lid and carefully take the baking pan out of the oven. Drain the water and release the eggs from the silicone cups.
  9. Serve immediately or freeze for later use.
