Mocha Nest Cookies
Ingredients:
- ½ cup room temperature butter
- 1 cup brown sugar
- 1 egg
- ½ tsp instant coffee
- 1 tsp vanilla extract
- ½ tsp salt
- 1 ¾ cup whole wheat flour
- ¼ cup cocoa powder
- 2 tsp baking powder
Instructions:
- Preheat oven to 400°F.
- Cream together the butter and brown sugar. Add the egg and mix until well combined.
- Dissolve the instant coffee in the vanilla extract, then add to the butter mixture and stir.
- In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder.
- Gradually mix the dry ingredients into the wet ingredients until a smooth dough forms.
- Roll dough into a log or scoop onto a baking sheet. Bake for 8 minutes.
- Remove from oven and allow cookies to cool completely before decorating.
To decorate as nests:
- Pipe a ring of chocolate frosting around the edge of each cookie.
- Roll the frosted edges in toasted coconut.
- Place a few macadamia nuts in the center of each cookie to resemble “eggs.”
