Cheesy Grits

Instapot Cheesy Grits

Ingredients:

  • 1 cup stone ground grits
  • 4 cups chicken or vegetable stock
  • ½ tsp smoked paprika
  • A few dashes of hot sauce
  • ½ cup grated cheddar cheese
  • 4 oz cream cheese

Instructions:

  1. In an Instapot or rice cooker, combine the chicken or vegetable stock, grits, smoked paprika, and hot sauce. Place the lid on and set for the “rice” setting.
  2. Allow it to cook for the full rice cycle (12 minutes with Instapot). Once the cycle is complete, release the steam.
  3. Add the grated cheddar cheese and cream cheese to the cooked grits.
  4. Taste and adjust seasoning as needed. Serve and enjoy!
